Crepe ingredients :
- 250g Flour
- 4 eggs
- 50cl Milk
- 1 bag of vanilla sugar
- 1 pinch Salt
Custard ingredients :
- 4 eggs
- 50cl Milk
- 125g Sugar
- 50g Flour
Instructions:
- Prepare the pancake batter by mixing in a bowl, the flour, vanilla sugar, salt and eggs. Gradually add the milk while mixing with a whisk.
- Let the dough rest for 1 hour in the fridge. Then cook your pancakes.
- For the pastry cream: in a bowl, break the eggs and mix them with the sugar. Add the sifted flour.
- SIn a saucepan, heat the milk with the vanilla pods split in half and scraped.
- As soon as it boils, remove the milk from the heat, remove the vanilla pods and pour the milk over the previous mixture, whisking vigorously.
- Return everything to the saucepan and heat over high heat, stirring constantly, until the mixture thickens.
- Line a pan the size of your pancakes with cling film, protruding on each side to be able to close once the cake is finished..
- Place a pancake in the bottom, cover with a thin layer of still warm pastry cream and repeat the operation until all the ingredients are used up, finishing with a pancake on top.
- Fold back the cling film and tamp lightly.
- Refrigerate for at least 3 hours or prepare it the day before.
