Easy Layered crepe cake recipe

Crepe ingredients :
  • 250g Flour
  • 4 eggs
  • 50cl Milk
  • 1 bag of vanilla sugar
  • 1 pinch Salt

Custard ingredients :
  • 4 eggs
  • 50cl Milk
  • 125g Sugar
  • 50g Flour
  1. Prepare the pancake batter by mixing in a bowl, the flour, vanilla sugar, salt and eggs. Gradually add the milk while mixing with a whisk.

  2. Let the dough rest for 1 hour in the fridge. Then cook your pancakes.

  3. For the pastry cream: in a bowl, break the eggs and mix them with the sugar. Add the sifted flour.

  4. SIn a saucepan, heat the milk with the vanilla pods split in half and scraped.

  5. As soon as it boils, remove the milk from the heat, remove the vanilla pods and pour the milk over the previous mixture, whisking vigorously.

  6. Return everything to the saucepan and heat over high heat, stirring constantly, until the mixture thickens.

  7. Line a pan the size of your pancakes with cling film, protruding on each side to be able to close once the cake is finished..

  8. Place a pancake in the bottom, cover with a thin layer of still warm pastry cream and repeat the operation until all the ingredients are used up, finishing with a pancake on top.

  9. Fold back the cling film and tamp lightly.

  10. Refrigerate for at least 3 hours or prepare it the day before.
